Waffles (Vegan & Gluten Free)

These vegan waffles are light, crispy on the outside, and fluffy on the inside. Perfect for a satisfying breakfast or brunch!

Ingredients

Dry Ingredients:

  • 2 cups gluten-free flour blend
  • 2 tbsp organic cane sugar (or granulated sweetener of choice)
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients:

  • 1 3/4 cups unsweetened almond milk (or any plant-based milk)
  • 1 tbsp apple cider vinegar (or lemon juice)
  • 1/4 cup melted coconut oil (or any neutral oil)
  • 1 tsp vanilla extract

Instructions

Step 1: Preheat the Waffle Iron

  • Preheat your waffle iron according to the manufacturer’s instructions.

Step 2: Mix the Dry Ingredients

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Step 3: Prepare the Wet Ingredients

  1. In a medium bowl, combine the almond milk and apple cider vinegar. Let it sit for 5 minutes to create a vegan “buttermilk.”
  2. Add the melted coconut oil and vanilla extract to the buttermilk mixture. Whisk to combine.

Step 4: Combine Wet and Dry Ingredients

  1. Pour the wet ingredients into the dry ingredients.
  2. Gently mix until just combined; avoid overmixing to ensure fluffy waffles. The batter will be slightly thick.

Step 5: Cook the Waffles

  1. Lightly grease the waffle iron with non-stick spray or a small amount of oil.
  2. Pour the batter onto the preheated waffle iron (amount depends on the size of your waffle maker) and cook according to the manufacturer’s instructions, usually 4–6 minutes, or until golden brown and crispy.

Step 6: Serve

  • Serve the waffles warm with your favorite toppings such as maple syrup, fresh fruit, vegan whipped cream, or nut butter.

Tips:

  • Crispier Waffles: Place cooked waffles on a wire rack in a 200°F (93°C) oven to keep them warm and crisp while you cook the remaining batter.
  • Storage: Store leftover waffles in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in a toaster or oven for best results.
  • Flavor Variations: Add 1/2 tsp cinnamon or 1/4 cup vegan chocolate chips to the batter for extra flavor.
