Ninja Creami Coffee Ice Cream (Vegan)

Here’s a delicious recipe for Vegan Ninja Creami Coffee Ice Cream! This ice cream is rich, creamy, and full of coffee flavor—perfect for your Ninja Creami machine!

Ingredients:

  • 1 ¼ cups unsweetened oat milk
  • 3/4 cup cashew milk or yogurt (vegan heavy cream or vegan whipping cream also works well)
  • 3 tablespoons arrowroot starch (or cornstarch)
  • 1/3 cup white or brown sugar (vegan)
  • 1 to 1 ½ tbs instant coffee (decaf or regular)
  • 3 tablespoons water
  • ¼ teaspoon salt
  • 2 tablespoons vegan butter (or coconut oil)
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Ice Cream Base:
    • In a medium bowl combine the oat milk, cashew milk or yogurt, and arrowroot starch.
    • In a medium saucepan, whisk together the sugar, instant coffee, water and salt, over medium heat until sugar dissolves. Allow mixture to simmer for about 7 minutes. Remove from heat.
    • Slowly whisk the milk mixture into the saucepan.
    • Return the saucepan to medium-low heat, stirring constantly until the mixture thickens slightly, about 5-7 minutes.
    • Remove from heat and add the butter and vanilla extract, stirring until the butter is melted and thoroughly combined.
    • Let the mixture cool to room temperature, about 15-20 minutes.
  2. Chill the Mixture:
    • Once cooled, pour the mixture into a Ninja Creami container and make sure the mixture does not exceed the “MAX FILL” line. Refrigerator for 2–3 hours, or until fully chilled.
  3. Freeze the Mixture in the Ninja Creami:
    • Freeze the mixture for at least 24 hours (this is important for the best texture).
  4. Process the Ice Cream:
    • After 24 hours of freezing, remove the pint from the freezer. Place it into the Ninja Creami machine.
    • Select the “Gelato” or “Ice Cream” function, depending on your preference. Let the machine process the ice cream.
  5. Check the Texture:
    • After the first cycle, check the texture of the ice cream. Use the “Re-spin” function until you reach the desired consistency.
  6. Serve:
    • Once the ice cream is at the perfect consistency, scoop and serve immediately! Optionally, top with vegan chocolate chips, a sprinkle of cocoa powder, or even some crushed nuts.

  • Sweeteners: Adjust the amount of sugar based on your sweetness preference.
  • Storage: Store any leftover ice cream in an airtight container in the freezer for up to 1 week. Re-spin it in the Ninja Creami if it becomes too hard.
