Yield: About 24 Servings
Ingredients
For the Chocolate Layer:
- 1 1/2 cups dairy-free dark chocolate chips
- 1 tbsp coconut oil (optional, for smoother chocolate)
For the Nut Butter Filling:
- 1 cup creamy nut butter (peanut butter, almond butter, or cashew butter)
- 1/2 cup powdered sweetener of choice
- 1/3 cup almond flour
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
Step 1: Prepare the Muffin Tin
- Line a muffin tin with 12 paper or silicone cupcake liners.
Step 2: Melt the Chocolate
- In a microwave-safe bowl or using a double boiler, melt the chocolate chips and coconut oil. Stir until smooth.
- Spoon about 1–2 teaspoons of melted chocolate into each cupcake liner, spreading it slightly to coat the bottom.
- Place the tin in the freezer for 10 minutes to set the chocolate.
Step 3: Make the Nut Butter Filling
- In a small bowl, mix the nut butter, powdered sugar (or maple syrup), vanilla extract, and salt until smooth and well combined.
- Scoop about 2 teaspoons of the nut butter mixture and roll it into a small disc or ball. Flatten slightly to fit inside the chocolate layer.
Step 4: Assemble the Cups
- Place a disc of nut butter filling on top of the set chocolate layer in each liner.
- Spoon more melted chocolate over the nut butter filling, making sure to completely cover it and seal the edges.
- Gently tap the tin on the counter to smooth the chocolate and remove air bubbles.
Step 5: Set the Cups
- Place the muffin tin in the freezer for 20–30 minutes, or until the chocolate is firm.
Step 6: Serve and Store
- Remove the nut butter cups from the liners and serve chilled or at room temperature.
- Store in an airtight container in the refrigerator for up to 2 weeks or freeze for longer storage.
Tips:
- Nut-Free Option: Use sunflower seed butter for an allergy-friendly alternative.
- Flavor Variations: Add a pinch of cinnamon or espresso powder to the nut butter filling for a unique twist.
- Decorations: Sprinkle flaky sea salt or crushed nuts on top before the chocolate sets for added texture and flavor.
