Nut Butter Cups (Vegan)

These chocolate nut butter cups are a delicious treat featuring a smooth nut butter filling encased in rich dairy-free chocolate. They’re quick, easy, and perfect for satisfying your sweet tooth!

Ingredients

For the Chocolate Layer:

  • 1 1/2 cups dairy-free dark chocolate chips
  • 1 tbsp coconut oil (optional, for smoother chocolate)

For the Nut Butter Filling:

  • 1 cup creamy nut butter (peanut butter, almond butter, or cashew butter)
  • 1/2 cup powdered sweetener of choice
  • 1/3 cup almond flour
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

Step 1: Prepare the Muffin Tin

  • Line a muffin tin with 12 paper or silicone cupcake liners.

Step 2: Melt the Chocolate

  1. In a microwave-safe bowl or using a double boiler, melt the chocolate chips and coconut oil. Stir until smooth.
  2. Spoon about 1–2 teaspoons of melted chocolate into each cupcake liner, spreading it slightly to coat the bottom.
  3. Place the tin in the freezer for 10 minutes to set the chocolate.

Step 3: Make the Nut Butter Filling

  1. In a small bowl, mix the nut butter, powdered sugar (or maple syrup), vanilla extract, and salt until smooth and well combined.
  2. Scoop about 2 teaspoons of the nut butter mixture and roll it into a small disc or ball. Flatten slightly to fit inside the chocolate layer.

Step 4: Assemble the Cups

  1. Place a disc of nut butter filling on top of the set chocolate layer in each liner.
  2. Spoon more melted chocolate over the nut butter filling, making sure to completely cover it and seal the edges.
  3. Gently tap the tin on the counter to smooth the chocolate and remove air bubbles.

Step 5: Set the Cups

  • Place the muffin tin in the freezer for 20–30 minutes, or until the chocolate is firm.

Step 6: Serve and Store

  1. Remove the nut butter cups from the liners and serve chilled or at room temperature.
  2. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for longer storage.
