Sweet Potato Fries

Yield: 4 Servings

Ingredients:

  • 2 large sweet potatoes (or 3 medium)
  • 2 tbsp olive oil (or any oil of choice)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp cayenne pepper
  • 1 tbsp cornstarch (optional, for extra crispiness)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper, a silicone mat or lightly grease it with oil.
  2. Prepare the Sweet Potatoes:
    • Peel the sweet potatoes (optional) and cut them into evenly sized fries, about 1/4 to 1/2 inch thick. Try to keep the fries uniform in size to ensure even cooking.
  3. Coat the Fries:
    • Place the cut sweet potatoes in a large bowl. Drizzle with olive oil, then add the smoked paprika, garlic powder, salt, and pepper. Toss everything well to coat the fries evenly.
    • For extra crispiness, sprinkle 1 tablespoon of cornstarch over the fries and toss again.
  4. Arrange on the Baking Sheet:
    • Spread the fries out in a single layer on the prepared baking sheet. Make sure the fries aren’t overcrowded, as this will help them crisp up better.
  5. Bake:
    • Bake for 30-40 minutes, flipping the fries halfway through the cooking time to ensure they cook evenly and become crispy on all sides.
    • Bake until the fries are golden brown and crispy on the edges.
  6. Serve:
    • Once done, remove from the oven and let the fries cool for a couple of minutes before serving.

Serve:

  • Serve your sweet potato fries with your favorite dipping sauce like ketchup, vegan ranch, or aioli.

Tips:

  • For even more crispiness: Try soaking the cut sweet potato fries in water for 30 minutes before baking to remove excess starch. Then dry them thoroughly before coating them with oil and spices.
  • Storage: Leftover fries can be stored in an airtight container in the fridge for up to 2 days. Reheat them in the oven for 5-10 minutes to get them crispy again.

Enjoy your crispy and flavorful sweet potato fries!
