Ingredients:

  • 4 tbsp fresh lime juice (about 2 limes)
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tbs maple syrup (or honey)
  • 1/2 cup light extra virgin olive oil (or any neutral oil)
  • 1 small garlic clove, minced (optional for extra flavor)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cumin powder
  • Pinch of chili flakes (optional, for a spicy kick)

Instructions:

  1. Whisk the Ingredients:
    • In a small bowl, combine the lime juice, vinegar, Dijon mustard, maple syrup, and garlic (if using). Whisk together until well combined.
  2. Add the Olive Oil:
    • Slowly drizzle in the olive oil while continuing to whisk, until the vinaigrette is emulsified and smooth.
