Here’s a simple and flavorful recipe for Cilantro Lime Rice, a perfect side dish to complement many Mexican-inspired meals!
Yield: 2 Cups
Ingredients:
- 1 cup long-grain white rice (or jasmine rice)
- 2 cups water (or vegetable broth for extra flavor)
- 1 tbsp olive oil (or vegan butter)
- 1 garlic clove, minced (optional)
- 1 lime, juiced and zested
- ¼ cup fresh cilantro, chopped
- ½ tsp salt (adjust to taste)
- ½ tsp ground cumin (optional, for added flavor)
- A pinch of black pepper
Instructions:
- Rinse the Rice:
- Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from being too sticky.
- Cook the Rice:
- In a medium saucepan, heat the olive oil (or vegan butter) over medium heat. Add the minced garlic (if using) and sauté for about 30 seconds until fragrant.
- Add the rice to the pan and sauté for another 1–2 minutes, stirring occasionally, to lightly toast the rice.
- Add Water and Cook:
- Add the water (or vegetable broth) to the rice along with the salt and ground cumin (if using). Bring the mixture to a boil.
- Once it’s boiling, reduce the heat to low, cover the pan, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the Rice:
- Once the rice is cooked, remove the pan from the heat. Let the rice sit, covered, for 5 minutes to allow it to steam and become fully tender.
- After 5 minutes, fluff the rice with a fork to separate the grains.
- Add Lime and Cilantro:
- Stir in the lime juice, lime zest, and chopped cilantro. Adjust salt and pepper to taste.
Serve:
- Serve the cilantro lime rice as a side dish to tacos, burritos, or any Mexican-inspired meal. It also pairs well with grilled vegetables or beans!
Tips:
- For a richer flavor, you can use coconut oil instead of olive oil and replace the water with vegetable broth.
- If you like your rice extra tangy, add more lime juice or zest.
Enjoy your fresh and zesty cilantro lime rice!
