Ingredients

For the Dough (Crust):

  • 3 tbsp organic cane sugar (or sweetener of choice)
  • 1 tbs lemon juice
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • Pinch of salt

For the Topping:

  • 1 tbsp coconut milk (or almond milk)
  • 1 tbsp sugar or maple syrup (optional, for brushing on top)

Instructions

Prepare the Dough:

  1. Combine the Dry Ingredients:
    • In a large mixing bowl, whisk together the gluten-free all-purpose flour, sugar, baking powder, and salt.
  2. Cut in the Fat:
    • Add the vegan butter and use a fork or pastry cutter to blend until the mixture resembles coarse crumbs.
  3. Add Water:
    • Gradually add ice-cold water, one tablespoon at a time, mixing until a dough forms. You may need 5 to 7 tablespoons, but be careful not to add too much water. The dough should come together but not be too wet.
  4. Chill the Dough:
    • Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
