Ingredients:

  • 1 cup canned coconut milk (full-fat for creaminess)
  • 1 cup almond milk (or any plant-based milk)
  • ½ cup brewed coffee (strong, chilled)
  • ½ cup organic granulated sweetener (or maple syrup for a sweeter option)
  • 1 tbsp instant coffee granules (optional for extra coffee flavor)
  • 1 tsp vanilla extract
  • 1 pinch of salt

Instructions:

  1. Prepare the Ice Cream Base:
    • In a medium saucepan, combine the coconut milk, almond milk, granulated sweetener, brewed coffee, and a pinch of salt.
    • Heat over medium heat, stirring constantly, until the sugar dissolves completely. Make sure it doesn’t boil.
