This vegan peach cobbler is a comforting dessert featuring juicy peaches topped with a golden, buttery biscuit crust. It’s simple to make and perfect for any occasion!

Yield: 9 Servings

Ingredients

For the Filling:

  • 4-5 ripe peaches (about 2 lbs, peeled, pitted, and sliced; or use 4 cups frozen or canned peaches, drained)
  • 1/4 cup organic cane sugar (or granulated sweetener of choice)
  • 1 tbs lemon juice
  • 1 tbs cornstarch or arrowroot powder
  • 1/2 tsp cinnamon

For the Biscuit Topping:

  • 2 cups all-purpose flour (or a 1:1 gluten-free flour blend)
  • 1/3 cup organic cane sugar (or granulated sweetener of choice)
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup vegan butter (cold, cubed) (or coconut oil, solid)
  • 1/2 cup unsweetened almond milk (or other plant-based milk)
  • 1 tsp vanilla extract

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (190°C). Lightly grease a 9×9-inch or similar-sized baking dish.

Step 2: Prepare the Filling

  1. In a large mixing bowl, combine the peach slices, granulated sweetener, lemon juice, cornstarch, and cinnamon. Toss until the peaches are evenly coated.
  2. Transfer the peach mixture to the prepared baking dish and spread it out evenly.

Step 3: Make the Biscuit Topping

  1. In a medium bowl, whisk together the flour, sweetener, baking powder, cinnamon and salt.
  2. Add the cold vegan butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
  3. Stir in the almond milk and vanilla extract until just combined. Do not overmix; the dough should be slightly sticky.

Step 4: Assemble the Cobbler

  1. Drop spoonfuls of the biscuit dough over the peach filling, leaving some gaps for steam to escape.
  2. Optionally, sprinkle the biscuit topping with a little granulated sweetener for a slight crunch.

Step 5: Bake

  1. Bake the cobbler for 35–40 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
  2. Let the cobbler cool for 10–15 minutes before serving.

Serving Suggestions:

  • Serve warm with a scoop of vegan vanilla ice cream or a dollop of coconut whipped cream.

Tips:

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
  • Frozen Peaches: If using frozen peaches, let them thaw and drain excess liquid before using.

Enjoy this warm and fruity vegan peach cobbler—it’s a true crowd-pleaser!
