Vegan Fudgy Brownie Recipe

Ingredients

Dry Ingredients:

  • 1 cup all-purpose flour (or gluten-free 1:1 flour blend)
  • 1/2 cup cocoa powder (unsweetened)
  • 3/4 cup organic cane sugar (or granulated sweetener of choice)
  • 1 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients:

  • 1 flax egg (1 tbs flaxseed meal + 3 tbs water)
  • 1/2 cup coconut oil, melted (or neutral oil of choice)
  • 1/2 cup brewed coffee (or water)
  • 1 tsp vanilla extract
  • 1/2 cup vegan chocolate chips

Optional Swirls or Add-in:

  • 1/3 cup peanut butter or caramel sauce
  • 1/2 cup chopped nuts (e.g., walnuts or pecans)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.

Step 2: Make Flax Egg

  • Prepare a flax egg by combining the ground flaxseed with water. Let it sit for 5-10 minutes.

Step 3: Melt the Chocolate

  • In a microwave-safe bowl or stovetop, melt chocolate chips. Set aside.

Step 4: Mix Wet Ingredients & Sugar

  • In a large mixing bowl, add oil, coffee, and sweetener. Whisk well.
  • Add in prepared flax egg, melted chocolate, and vanilla extract. Mix well.

Step 5: Mix Dry Ingredients Into Wet Ingredients

  • Sift into the wet ingredients the flour, cocoa powder, baking powder, and salt. Mix until just combined.

Step 6: Optional Mix-Ins or Swirls

  • Fold in chocolate chips and/or nuts (if using).
  • Dollop peanut butter or pour caramel sauce onto brownie batter and swirl it into the batter before baking.

Step 7: Bake

  1. Pour the batter into the prepared baking pan and spread it evenly.
  2. Bake for 25–30 minutes, or until the edges are set and a toothpick inserted into the center comes out clean.

Step 8: Cool and Serve

  1. Allow the brownies to cool in the pan for at least 15–20 minutes before slicing. This helps them firm up and develop their fudgy texture.
  2. Slice into squares and serve.
