Instructions
Step 1: Prepare the Cake Batter
- Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, mix the almond milk, coconut oil, applesauce, vanilla extract, and apple cider vinegar. Stir to combine.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Stir in hot coffee or boiling water. The batter will be thin—this is normal.
Step 2: Bake the Cake
- Divide the batter evenly between the prepared pans.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Step 3: Make the Chocolate Frosting
- In a large bowl, beat the softened vegan butter until creamy.
- Add the powdered sugar and cocoa powder gradually, mixing until smooth.
- Add the almond milk, vanilla extract, and salt, and beat until the frosting is fluffy. Adjust the consistency with more almond milk if needed.
Step 4: Assemble the Cake
- Place one cake layer on a serving plate. Spread a generous layer of frosting on top.
- Place the second cake layer on top and spread frosting over the top and sides of the cake.
